Alison has had a very interesting start when she was deciding what to study in college. She starting out wanting to be a lawyer and then dietetics found her. She has worked in a variety of settings from long term care and private practice to her current role with the Dietetic Internship with Iowa State University. Along the way, she has found her passion for body kindness, intuitive eating and volunteering with different student organizations while she is also raising 2 daughters. Alison has a strong fire burning inside her for our profession and I hope it fires up something inside of you.

Nutrition Nosh Three. Week in Review. 

Thank goodness I have gotten a large capacity phone because I have taken a ton of photos lately. I sometimes crack myself up with the variety I have in my photo album and think "wth was I doing" when I took that? I want to share some of the photos I have taken this past week because they have really resonated to the person I am becoming. Simple things touch me and mean more to me than anything and I am really going to take on the mantra of "less stuff, more life."

I had a client in my office a few weeks ago and we were talking about the beautiful day outside. She was telling me about how she loves to listen to music and drive home with the sunroof open in her car during days like this. It dawned on me, I have a sunroof and I do not think I have opened it once in 2017. Redic. I kind of forgot about my revelation and our conversation until this week. It has been warm and lovely in the evenings and I am busting open the sunroof and all the feels coming with it. Thank you to my client and friend for reminding me about something so wonderful.

This past week, I was very moved by KIND Snacks. I have always been a fan of Kind Snacks because their products are delicious, wholesome and quality (very similar to how I like my life) and I am a nutrition ambassador for them because I believe in their mission and food. In Times Square, they created this visual of the amount of added sugar children in the U.S. are consuming every 5 minutes, 45,485 pounds!  Are you kidding me? I mean I kind of guessed it was outrageous being a dietitian but this ridiculous?  It is time for a change. A big one.

KIND is creating foods kids (and adults) will love, like these fruit snacks. These fruit snacks are made with fruit, shocker!  There is no fake gel type shapes of cartoons or movie characters, just pure dried fruit ingredients and no added sugar. No need to fortify with Vitamin C for some type of health claim. I absolutely recommend these to all ages. 

The Scoop on Added Sugar KIND Snacks

If you haven't really taken a look at the added sugars in your food, you really should. A few grams here and there can add up to big numbers at the end of the day and this is not just for kids!  If you are finding yourself crashing during the day, being mentally foggy, having difficulty focusing, pants are constantly tight and you feel bloated, it might be time to take a look at the added sugar in your life, it may be in foods you never thought it was in.

A special young lady spoiled me with this monster zucchini. I cannot wait to zoodle it up and make up bags for my freezer for some easy meals that I will be sharing.

She also gave me these delicious cucumbers I ate at least 6 different ways. I will be eating my last one tonight (insert tear falling down my left cheek). I am so grateful for these garden eats.

This summer has been wild for my allergies and I am still going strong with the help of MOCU Health Kombucha. Seriously, have you given it a try yet?  I can already feel fall (and winter) fast approaching and I feel more confident than ever my immune system is going to be a badass. I am sharing this because I really think it is awesome and you might think I am crazy (you will think I am crazy)...I have been continuing to work on my "less stuff, more life" by going through boxes and things in my home. I seem to have a bunch of fancy crystal I am not using. Through the process, there were a few things I liked but really had no use for and then I remembered I have this fur baby. Lil g could use some new dishes to dine and drink out of, so why not purpose those for her?  The best part is gangster kitty enjoys the fresh water from my daily morning shower, so her beautiful new crystal bowl resides there to quench her thirst, while she enjoys her sensitive tummy food (yes, my kitty has food allergies, go figure) with a lot of love in the shape of a heart.

I was excited to see my rotisserie review for Food and Nutrition Magazine come to life this week! Damn it was a great tasting chicken.

The week ended with a big smile on my face. I accomplished a lot of important things. Simple things with a big impact. To enjoy the sun, to be given food grown with love, to be inspired by a purpose, to find joy in sharing beauty, and to see your talents being published. This is what becoming the woman I am is all about. Then there was this meal. The food was good but the company and conversation was great. This is what life is all about.

Nutrition Nosh Five. What I Love Right Now.


I get the opportunity to work with great food AND great people, including this guy, Chef Andrew. Each week he has a great segment on a local TV station KCCI called Get Cooking with Hy-Vee and comes up with a variety of great eats. This month, we partnered up with beef as the Hy-Vee Dietitian Pick of the Month and made Burger Bowls. I love this idea. It is a simple dinner idea and you can use any type of toppings your tribe likes. Make sure to catch the video above for your burger bowl inspo and to follow all of Chef Andrews creations on his Facebook Page.

Grilled Burger Bowls with Grilled Summer Veggies
Serves 2
Recipe courtesy of Chef Andrew with Hy-Vee

All you need:

  *   2 (5-oz each) 85% lean hamburger patties
  *   Salt and pepper, to taste
  *   1 red onion, sliced thick
  *   1 zucchini, sliced into wedge quarters
  *   8 asparagus spears
  *   1 red pepper, seeded and cut into triangles
  *   4 mushrooms, sliced thick
  *   2 tbsp Hy-Vee Select garlic flavored olive oil
  *   4 cups fresh greens, such as spring mix, spinach, baby kale or arugula
  *   3 tbsp feta cheese
  *   Yogurt based dressing of choice, such as creamy roasted garlic or caramelized sweet onion

All you do:

  1.  Preheat grill to medium high. Season burgers with salt and pepper and set aside.
  2.  Place veggies on a plate and evenly drizzle with garlic olive oil and season with salt and pepper. Grill burgers and vegetables until desired doneness for both and keep covered while assembling salad.
  3.  To assemble, place 2 cups of mixed greens into two bowls. Evenly divide vegetables on top of mixed greens and finish with grilled burger, feta cheese and desired dressing. Serve immediately.

It's Bananas!  B A N A N A S!  August sure is!  This month is BIRTHDAY madness in my tribe and I love celebrating all my heartbeats!  I agree with Betty...my heartbeats are only getting better. My heartbeats are so awesome and I get so excited for to celebrate their special day. I am a big believer in putting emphasis on a birthday than during the holiday season. We celebrate and over do so many other holidays, I think someones day of birth IS the most important holiday. 

Without this special day, this person would not exist in our lives. 

Take the time to celebrate the people in your life by making a special effort on their birthday. Let them know how grateful you are they were born into this world and are a part of your life. Show them the profound impact they have made on you. Celebrate their greatness on their special day and remind them they only get better with another year.

Sports Nutrition is quickly becoming a popular job opportunity for Registered Dietitians and working with all types of college athletes. So, I was very excited when I reached out to Nicole and she agreed to be a part of this podcast. Nicole shared some great information about the blood, sweat and tears she put into finding the perfect sports nutrition job for her and some advice for others looking to get into the profession. Nutrition Nosh Three. Week in Review.

Birthday fun has started! I got to kick start August with a little early celebration of my favorite Carlena!   You see, Carlena has a little bit of a milestone birthday this year (welcome to the 40's club doll!) and her hubby is surprising the shit out of her with a fabulous vacation, which they should be leaving on a jet plane right about now headed for the tropics.

Since I was unable to join them for the sand and sun, it just so happened another one of my friends, Jackie, also joined the fabulous 40's club a few weeks ago. She has a beautiful lake house and invited us all out for a fun-filled ladies celebration.

A day at the lake was nothing short of a lot of food, cocktails and laughs. I know my salty snacking Carlena very well and she would much rather have a cake make of chips than one made out of flour and sugar. So I packed up a few bags of Doritos, Corn Nuts (another one of her favs) and a bottle of Grey Goose.

The rest of the girls made sure to have special cakes made for the birthday girls and snazzy glasses for lake day cocktails.

All of us ladies do not get to see each other a ton, so it was a special day of catching up and celebrating.  The weather was perfection, 80 degrees, tons of sun and calm waters. I think the best part of the day was all of us trying to get on a 10 person raft to float on the lake. Pure comedy.

We made this lake day count with some kick ass food! The girls made delicious BBQ chicken and pork sammies, beans, fresh salsa, delicious dips, freshly squeezed margs and some puppy chow I also brought to selfishly curb my own sweet tooth.

And at the end of the day, we relaxed and took a soak in the warm and cozy hot tub.

Then it was time to start week two of Augustmania!  I was asked again to judge the Iowa Farm Bureau Cookout Contest at the Iowa State Fair.

I really look forward to being a part of this event every year. The entries are unbelievable and I get to taste a variety of delicious recipes.

This year, I judged the combination group. There were 8 different items and all of them were really delicious. There were 2 that really impressed me was Rod's Bacon Wrapped Shrimp created with shrimp from Iowa, Triple M Shrimp in Rockwell City (and of course bacon from Iowa). I had no idea there were shrimp farms in Iowa!

Gyro Nachos

My second favorite combo recipe was these ever soooo tasty Gyro Nachos made with a flavorful and a perfectly cooked mix of lamb and beef. Shawn, the creator of the recipe said he was inspired by learning about the country Greece in school.  He hopped on Pinterest for some inspiration, made his own tzatziki sauce and this recipe. I loved his passion! I loved these nachos! You can download these 2 recipes and the entire cookbook from the competition from Iowa Farm Bureau here

Iowa State Fair Butter Cow

This is also the first year I took the time to go give the Butter Cow a visit. I had never seen it before. It is quite impressive. And it reminded me how much I love butter. #UndeniablyDairy #DairyGood

Each year, they also do a special butter carving and this year was of Laura Ingalls Wilder who lived in Iowa for a portion of her life. You should have seen the line for viewing both of these on a Tuesday afternoon. It was wrapped around the building.

So, I decided I needed some cookie dough ice cream from the Dairy Barn to make the wait even better. I was a little full of nachos, but who can resist dairy delicious ice cream! After I finished my butter viewing and ice cream eating, I jotted home to get ready for birthday fun, round two!

That same day, Carlena came to Des Moines in the afternoon to celebrate "Part Two" of her birthday with a trip to the Iowa State Fair with our friends Jason and Lindsey for some live music! I asked her what she wanted to do for her birthday and tickets to Flo Rida it was!

The concert was so fun!  We forgot how many awesome and dance worthy songs he has. It was 2 hours of non-stop fun. The Iowa State Fair had some great concerts this year and I am glad Carlena chose this one!

I love cheese curds. Fried. I will never go to the Iowa State Fair and not have a warm toasty basket of these golden gooey lovelies. I may have had one after the Cookout Contest and another one after the concert. Maybe it is an Iowa thing, but for some reason they taste so good at the fair. No ketchup, ranch or any other dipping sauce needed. This fried cheese stands alone.

Nutrition Nosh Weekly Inspirational Quote

This week I am celebrating my anniversary of being a dietetic intern....17 years ago. I remember how crazy this time was in my life. I was waking up some days at 3 am to work (for money) before I went to my internship, studying and completing projects in the evening and then also trying to work on the weekends (for money). I did not know which way was up. I woke up crying most mornings because I was physically and emotionally worn out. There were many times I wondered what the hell I was doing and if this dietetic thing was all worth it. 

17 years later, it is ALL worth it. 

Throughout our whole lives we make decisions. Decisions affecting our lives in a variety of ways. However, these decisions are only the beginning to what unfolds. You cannot always be prepared for what happens next but this is when things get good. You get challenged, you triumph, you get your ass kicked, you find your purpose and find out who you really are. There is no study guide or amount of time to ace all the tests of your life. Make the decisions. Stay the course. Get your ass kicked. Kick some ass and always believe it is all worth it.

She is early into her internship but is keeping an open mind to all the possibilities this profession has to offer.

Sweetest Cherries and Tomatoes Photo

This week was all about food and relaxing. I took a few steps back this week and enjoyed the weather cooling down by grilling and going for evening strolls. I enjoy weeks when I have some downtime to accomplish my list of domestic goddess duties, eat great food and sleep in until 8 am. If I haven't told you before, I work with some GREAT people. My co-worked Kelly, who manages all the beautiful, dietitian-approved produce, gave these "sweet treats" to me so I would put my stamp of approval on them. He knows how much I love cherries, so when I tasted the Skylar Rae® Cherries, it was like drops of heaven in my mouth. They are impeccably sweet, who needs candy?  He also knows I am wild about bruschetta and these Sunset Angel Sweets taste amazing with my garden basil, fresh mozzarella and balsamic vinegar.  Summer is the best time for the best tasting produce!

Saturday morning I got to hang out at work and we had a beautiful Farmers Market of all of our fresh and local produce items. I also got to hang with my friend Jason, double win!

Pretty sure the best part of the day was when I poured myself a coffee on this beautiful cool and breezy August Saturday morning and dived into our NEW freshly made donuts and donut holes we have at the Fleur Drive Hy-Vee. I may have had a donut and 4 donut holes. It was a lovely dietitian approved brunch amongst the flowers. 

Big Burger Mac Bowl

On Saturday night, I grilled out on my patio and made burgers. I was really craving something a little more than a burger with ketchup and mustard, so I got a little crazy and created this mouth-watering Big Burger Mac Bowl. 

Big Burger Mac Bowls
Serves 2

Real Deal (RD) Directions:
1/2 pound of 85% ground beef, divided into 4 and pattied
4 slices of thinly sliced Sharp Cheddar Cheese
1/2 cup finely chopped white onion
4 tablespoons of Wishbone Light Thousand Island Salad Dressing
A plethora of pickles (because, yum, pickles)
6 cups of chopped lettuce
1 teaspoon of roasted sesame seeds 

1. Grill the hamburger patties to your liking 
2. Throw sesame seeds in a pan on medium heat until seeds are lightly brown, don't burn them!
2. Divide lettuce onto 2 plates 
3. Top with 2 grilled patties
4. Top each patty with a slice of cheese
5. Pickle mania
6. Divide and sprinkle the onions
7. Drizzle 2 tablespoons of dressing on each plate
8. Sesame seed shower

To end the weekend, I spent Sunday afternoon being an exceptional pianist. You should of heard the sweet sounds coming out the windows. It would have taken your breath away (My neighbors might debate this).

Iowa Grown Honey

I love my clients. I always get thought of in special ways. A customer this week has bees and shared some of his honey and honeycomb. Have you every had honeycomb?  Just a warm piece a toast, a little piece of honeycomb and a dash of cinnamon is better than any dessert. I look at honeycomb in amazement because these little bees produce this architectural art. I plant pollinator plants every year and you should too!

My other love this week was my lifelong friend Jennifer texting me and asking me who some of our teachers were growing up. We were a little fuzzy on 3rd and 4th grade. Jennifer reached out to another classmate, Joni and within minutes, she sent class photos. First, I love that Jennifer was reminiscing and included me. Second, I love that Joni was Johnny-on-the-spot and had such quick access to these photos!  As you can see, I grew up with a special small group of people. Great memories I wouldn't trade for the world.

Live a "Hell Yeah" Life Inspiration


Back in 2015, I really got into listening to podcasts and I stumbled upon a podcast Tim Ferris had with Derek Sivers. I knew nothing about Derek, but there was much of their conversation I resonated with. What really smacked me upside the head and make me have a moment of clarity was this:  if someone asks something of you or if you ask something of yourself, if you cannot say hell yeah with excitement and enthusiasm, then the answer is no. 

I can say no. 

I can say no and I do not have to feel bad or sorry or in any way obligated to do something I do not want to do. If doing it does not mean something significant to me, my life and my future, I am not going to do it anymore. This has been the best gift I have ever given myself because now I am saying hell yeah to a bunch of cool shit I would not have in the past, like my hell yeah trip to the Rock and Roll Hall of Fame. 

You deserve a hell yeah kind of life, stop putting it off and start living it today.

Rachel and I had a great conversation today. Rachel radiates passion for being a Registered Dietitian and is flourishing as a Nutrition and Wellness Specialist for the Iowa State University Extension and Outreach. I didn’t not get a lot of experience with Extension when I was in my internship and I think it is very important for many of us to look more into this career opportunity. Rachel and I share many similar interests when it comes to food, cooking and our favorite fruit, cherries. She enjoys and excels as an expert in media by doing a monthly live TV segment and you must follow her Instagram feed for beautiful food photos of recipes she is recreating at home.  Another fun and amazing tidbit about Rachel is she has been training and doing triathlons this summer.

Nutrition Nosh Three. Week in Review. 

My music loving soul has always longed to visit the Rock and Roll Hall of Fame. When I am scheduling my time off throughout the year, Cleveland hasn't quite made the cut.  I had this crazy opportunity to head to Ohio and I said hell yeah to a quick trip of rock and roll, food and a little adventure.

I stayed at the Westin Cleveland Downtown which turned out to be a great deal on a last minute whim and is within walking distance to almost everything downtown you could ask for, including the Rock and Roll Hall of Fame.


I needed some fuel before I started my rock and roll adventure and luckily there was an amazing restaurant in the Westin, Urban Farmer. The menu focuses on Midwest food traditions and local, organic sourcing of their food. I of course looked at the entire menu outside of breakfast and I love the different twist they take on traditional food. Breakfast had so many choices and I couldn't resist the Honey Biscuit which was a fried egg, sausage gravy, crispy chicken leg and lemon marmalade. What you couldn't see is the flaky puff pastry style biscuit and a pickled slaw underneath the egg. I also got a side of the homemade chicken cherry sausage, hello cherries! It was all so delicious and perfectly cooked. If you ever go to Cleveland, I highly recommend breakfast here, but do not shy away from other times of the day. The lunch, Happy Hour and dinner menu look pretty amazing too.

I headed down the street toward the lake with a snazzy little skip to my step. I was so excited!

As I approached the museum, there is music playing outside to get me pumped up for this experience.  I was getting there exactly as it was opening and I got in line for my ticket. I wasn't the only one with the same idea of being there when it opened. I started looking through the all the different exhibits and I knew it was going to be a fun full day. 

#LongLiveRock Rock and Roll Hall of Fame

As you walk in there is pictures of legends everywhere. Legends I knew of and legends I did know anything about. The 2017 Inductees have a tribute area with instruments, clothing and informational tidbits about each musician/band. I learned all about ELO and Yes, which I had heard their songs before but had no idea who they were and I reminisced of when Pearl Jam was a new band in my high school years.

There are stations of headphones to learn about the history of music and the different artists who created the roots of rock and roll. Each step I took took me through a different decade of rock and roll. There were artists I remember my Dad having old 45s of and listening to them on his recorded tapes of "Bob's Favorites" like Patsy Cline and Johnny Cash. 

In each of the decades, many different artists were featured and videos were played to present the history of music during that time. The cases were filled with clothing, instruments, music and lyrics, posters, awards and just cool shit. For example, I had no idea Jimi Hendrix liked to draw!  They had a few of his drawings on display. 

#LongLiveRock Sun Records and Elvis

I have recently got into the history of Sun Records and at the museum, they have a section where the studio was recreated with some of the original equipment. I am enthralled with how they recorded then.  I have now added a trip to Sun Records to my bucket list because of this exhibit. Around the same area, they have the stages of what we have listened to music with and how music was recorded over the years. It was great seeing original record players, speakers, tape players, boom boxes and portable CD players.

The next section I loved and spent a lot of time in was the clothing of artists.  My favorite was the gorgeous dresses of The Supremes. Pink, feathers and sequence. Gorgeous!

And of course, Michael Jackson. I remember getting the Thriller album for my birthday and I could stop kissing the inside cover of the record because I loved him so much. It was the first record I ever owned and I still have it. It is really cool to see the personal items of different artists in person, it is very different from how I envisioned them in my head if I met them in person. 

John Mellencamp had a great feature area of all his records, history and memorabilia. I enjoyed his exhibit a lot too because we listened to his music all the time in small town Panama, Iowa. I forgot how many hit records and songs he has. 

The Rock and Roll Hall of Fame was great and I will have to go back because they change their exhibits all the time. If you are a music junkie like me, you will really enjoy the history of the museum. This is only a glimpse into my time spent, so if you want to see more pictures or chat about all the cool shit I saw, lets get together. 

Zocalo Cleveland Ohio

After a few hours in the museum (8 hrs), I worked up an appetite and wanted to spend the few hours I had left in Cleveland by exploring the rest of the city. I hit the pavement back to the hotel and headed to East 4th Street. This is a fun area to go to in Cleveland with a variety of restaurants and places to have cocktails. I stopped into Zocalo because it was the perfect time for Happy Hour. Tequila, chips and salsa and a Dos XX to start off my food and cocktail adventure. Everything was made fresh and they have a nice selection of tequila. Great way to start the night.

I then wandered off to my favorite place of the quick evening adventure, The Greenhouse Tavern. This place was awesome.

I loved the vibe of the restaurant. The lighting was cozy and calm with the rustic decor of dark walls. All the food was trendy, like the warm cauliflower salad with golden raisins, pistachios and sheep's milk cheese or their Boudin which is a mushroom leek tart (yum). Great adventure food and far from burgers and fries.

My FAVORITE item on the menu was the handcrafted GH-Tea. It was the one of the most delicious cocktails I have ever had. Tito's Vodka, Organic honey, lemon and Gunpowder Matcha. If you ever make it to Cleveland, add this place to the list and do not be scared of the Gunpowder Matcha. 

Chocolate Bar Cleveland, Ohio

Before I headed back to the hotel, I walked past the Chocolate Bar. How could I pass up a chocolate nightcap?  They have quite the menu of desserts, late night eats and what caught my eye:  Liquid Desserts. I fell for the Hot Chocolates with a Kick and chose the Spiked Caramel Sea Salt. Delicious dark chocolate, caramel and white chocolate liquor with whipped cream and a dash of sea salt. It was the only way to end my rock and roll day.
