Be My Valentine

Love is in the air, everything is covered in pink, red and white. Flowers and candy by the bags and bunches.  Reservations have been made, cards have been signed and maybe even a few engagement rings have been purchased.

Whatever your day brings, I hope you give love more than you are receiving it. Smile at the stranger you pass by, do something for someone you work with that makes you go out of your way. Make Valentine's day be about just caring for everyone in your life.

And....enjoy something sweet (in moderation of course).  Try this delicious and healthier version of my favorite Valentine's Day treat.

Red Velvet Cheese Ball
16 servings

8 ounces fat-free cream cheese, at room temperature
1 1/2 cups dry red velvet cake mix
1 tbsp brown sugar
1/4 cup powdered sugar
1 cup dark chocolate chips
Mini vanilla wafers, animal crackers and teddy grahams

In the bowl of a standing mixer, beat cream cheese until smooth. Add in the red velvet cake mix and both sugars. Beat until smooth.
Turn the mixture out onto a piece of plastic wrap, wrap into a ball and refrigerate for at least 2 hours.
Place chocolate chips into a shallow bowl and place chilled cheeseball into dish, roll in chocolate chips.
Serve with assorted cookies and graham crackers.
