Sass Up Your Salad!

Salad can be a healthy entree or side when dining out and watching your waistline. Why not dine in and eat a healthy salad at home? Healthy salads do not have to be boring and the possibilities are endless. Just by walking around your grocery store, there are some great combinations available for you to never be bored with a healthy salad again.

Here are some great ideas to sass up your salad:

-Asian Flair: Mix 1 bag of lettuce with snap peas, slice carrots, chow mein noodles, crushed peanuts and a Light Asian Vinaigrette

-Fiesta Fun: Mix 1 bag of lettuce with drained and rinsed black beans, thawed frozen corn, light shredded cheddar cheese, toasted corn tortilla strips and use your favorite salsa as the dressing.

-Brilliant Bruschetta: Mix a pint of halved grape tomatoes, 1 cup of diced fresh mozzarella, chopped fresh basil and a Light Balsamic Vinaigrette, pair with toasted whole wheat baguette slices.

-Sweet and Sassy: Mix 1 bag of lettuce with red raspberries, 1 small can of drained (save juice for dressing) mandarin oranges, 4 chopped green onions, 1 diced jalapeno (with a few seeds), 2 cups of shredded rotisserie chicken. Mix mandarin orange juice with 3 tablespoons of soy sauce, 2 tablespoons of red wine vinegar, 1 tablespoon of extra virgin olive oil, ground black pepper to taste.
