Healthy and TASTY Holiday Appetizer

I just wanted to share an easy, healthy and tasty holiday appetizer I have shared in my store. These are perfect for taking to a friends house or having before your holiday dinner. What is even better, they take less than 15 minutes to make and are even better if made the day before and refrigerated.  I doubled the recipe for a larger crowd and added a little garlic powder to give it a little more zip. Use a food processor for the pistachios and cranberries to make it even easier.

The Cabot Light Cheddar are seriously the most fearful reduced fat cheese options in the grocery store and have 50% less fat than full fat cheese options. You and your guests will not feel guilty one bit!

Cheddar, Canberry & Pistachios "Pops"

Ingredients:
8 ounces Cabot Sharp Cheddar, Extra Sharp Cheddar or Sharp Light Cheddar, grated (about 2 cups)
1/3 cup Plain Greek-Style Fat-free Yogurt (can add more if needed)
1/2 cup finely chopped pistachios 1/2 cup finely chopped dried cranberries
About 24 short pieces fresh rosemary (optional)

Directions: 1. In medium bowl with fork, mix/mash together grated cheese and enough of yogurt to make mixture that holds together well; shape into about 2 dozen (1-inch) balls.

2. In another bowl, mix together pistachios and cranberries. Roll each ball in mixture, pressing in firmly to coat. Cover and refrigerate until ready to serve. Just before serving, insert small piece of rosemary in each ball if desired.
